Herring Family Cornbread

 

We love this recipe because it is so simple to make and tastes delicious! It's delicious, moist, creamy, has a bit of "tooth" because of the corn kernels, and just a bit sweet, but not enough to be odd on a dinner plate. Feel free to experiment with some add-ins like sautéed onions or cooked, chopped bacon!

The Herring Family Cornbread

  • 1 can creamed corn
  • 1 can sweet corn kernels (drained)
  • 8 oz sour cream
  • 1 box cornbread mix
  • 2 eggs
  • Shredded cheese (optional, to taste)

The preparation is  super simple. Just mix all of the ingredients (except the cheese) 

together. Pour into an oven-safe dish or pan. Sprinkle the cheese on top

 (again, absolutely optional) and place into a pre-heated, 350° oven for 40 minutes.
